Cold storage of Pacific oysters out of water: biometry, intervalval water and sensory assessment ArchiMer

Due to the important economic activity of oyster production in France, microalgal toxic events represent a significant constraint for shellfish farmers who face closures of bivalve production-sites. The frequency of closures of 3 weeks or less represents half of the total closures along the French coasts. Cold storage could be a simple and affordable solution for temporary and short-term storage before commercialisation. A stock of marketable Pacific oyster Crassostrea gigas was therefore stored during 22 days in non-immersed conditions at 3 degrees C with 100% humidity. La contamination des denrées d’origine marine par des toxines algales (phycotoxines) a pris depuis quelques années une importance considérable. Ce phénomène est largement lié à l’augmentation du nombre de zones géographiques touchées ainsi qu’à la diversification des espèces toxinogènes et à l’identification de nouveaux composés toxiques. Les données épidémiologiques sont cependant encore peu nombreuses car elles sont liées à la mise en place de contrôles systématiques récents. The maintenance of bivalve commercialisation du ring periods when sales are prohibited represents a major economic issue for shellfish-farming. To ensure their survival and to preserve the oyster Crassostrea gigas quality, their storage in land-based systems has been studied i) out of water in a cold room at 3°C with controlled humidity, enabling the bivalve sensory quality to be retained for 15 days, and ii) in recirculating systems in immersed conditions for 30 days. For the latter, the oysters were stored at 167 kg.m3 density in a tank equipped with an air-lift system, with water treated with UV and thermoregulated. In response to the closure of shellfish production sites due to increasing occurrence of toxic algal blooms, land-based recirculating aquaculture systems (RAS) could be used by producers to store a proportion of their stock temporarily. An RAS prototype was tested in this study to store Pacific oyster Crassostrea gigas over a range of temperatures. In such systems, the water temperature is a variable that could influence the bivalve excretion rate of ammonia, the concentration of which may become critical for the water quality.
